Agave Spirits are distills that come from the Agave plant. Such plant has played an important role in the Mexican culture for many many years, as they use to extract the sugars by cooking it. As a matter of fact, that is where the word "Mezcal" finds its origin: Mezcalli (Metl = agave, Ixcalli = cooked), in the Nahuatl language.
Historically, all Agave Distills are Mezcales, but since 1994 (NOM-070-SCFI-1994) Mezcal as a word can only be used for certain Agave Distills.
